Hungarian Goulash Soup

Enjoy this delicious hungarian goulash soup with a salad and crusty bread.


1 pound lean pork, cut into cubes

3 Tablespoons vegetable oil

1 onion, chopped

2 cloves garlic, or 1 teaspoon dried garlic

1 green pepper, chopped

2 Tablespoons paprika

6 cups water or vegetable broth

3 or 4 large potatoes, cut into 1-inch cubes

2 or 3 carrots, sliced

1 tomato, chopped

2 parsnips, sliced (optional)

1 teaspoon salt

1/2 teaspoon pepper

2 Tablespoons parsley


Heat oil in skillet, add pork and cook until brown, stirring continually.

Reduce heat, add onions, garlic, green pepper and paprika. Cook until onions are soft, stirring frequently.

Add water or broth. Cover and simmer for 1 hour.

Add vegetables and seasonings. Cover and simmer for about 20 minutes more or until vegetables are tender.

Serves 5-6.
